THE CHATTANOOGAN HOTEL APPOINTS NEW PASTRY CHEF

CHATTANOOGA, Tenn. (May 29, 2014) – The Chattanoogan hotel, a Benchmark Hotel® and the city’s only AAA Four Diamond-rated full-service property, has hired a new pastry chef who is already delighting guests with her sweet culinary creations. Pastry Chef Alyssa Mast is enhancing the hotel’s culinary program by preparing all of the desserts served at the hotel. She is creating dozens of delicacies each day, including muffins, bars, cookies, cakes, pies, puddings, tarts, cobblers and other desserts for Broad Street Grille, The Foundry, Stroud’s, in-room dining, and for groups and special events. Many of Chef Alyssa’s desserts are made with local, seasonal ingredients, and there are several gluten-free offerings.

“We are very excited about Chef Alyssa joining the culinary team at The Chattanoogan,” says Adam Roe, executive chef of The Chattanoogan hotel. “She is extremely innovative and passionate about her work, and we look forward to her amazing creations being an integral part of our restaurants and catering menus for many years.”

Chef Alyssa has just introduced a new dessert menu for the hotel. Selections include Key Lime Cheesecake Cake with Margarita Simple Syrup and Graham Cracker Crunch Coating; Strawberry Panna Cotta with Fresh Strawberry Compote; Peanut Butter Ice Cream Sandwich with Chocolate Cookie, Peanut Butter Ice Cream and Chocolate Fudge; Coconut and Pineapple Upside-Down Cake with Rum Soaked Cherries and Caramel; and Flourless Chocolate Mousse Cake topped with Dark Chocolate Ganache and Espresso Ice Cream.

Before being named pastry chef at The Chattanoogan, Chef Alyssa was the pastry chef at Enzo’s Market, a popular, full-service artisan grocery and café located in downtown Chattanooga. She was responsible for preparing the handcrafted pastries and other desserts using natural, local and regional ingredients.

Chef Alyssa previously worked in the banquets department of The Chattanoogan, and she was a decorator at Chattanooga Cupcakes. While attending culinary school in Charlotte, N.C., Chef worked at Best Impressions Caterers and at The Point, which is now Trump National Golf Club.

Mast graduated from Johnson & Wales University with a Bachelor of Science Degree in Baking & Pastry Arts and Food Service Management. She enjoys hiking, traveling, eating out and spending quality time with her longtime boyfriend and new puppy.

Broad Street Grille, one of Chattanooga’s top restaurants, is a favorite of locals and visitors alike. BSG serves Regional Southern Cuisine and works closely with area farmers and purveyors to provide diners with the freshest products available. In addition to sustainable seafood, the restaurant features prime meats, house made pastas, signature side dishes and rich sauces to offer an incredible contrast of flavors and textures. BSG offers delicious dinners, affordable lunch buffets, daily breakfast buffets and the best Sunday Brunch in town. The nightly Chef’s Table is a unique interactive dining experience for up to eight guests. Located at the exhibition kitchen, diners may order from the menu or allow the chefs to create an incredible tasting menu with the area’s finest local ingredients.

The Foundry, The Chattanoogan’s upscale lounge, is adjacent to Broad Street Grille. Delicious appetizers, salads, sandwiches and light entrées are offered nightly. The Foundry has a full bar with top-of-the-line liquors, a wide selection of fine wines and champagnes by the glass and bottle and an extensive selection of handcrafted cocktails. Musicians perform live jazz in the lounge on weekends. Pool tables and wide-screen TVs are provided for guests’ enjoyment in The Foundry’s game room.

Strouds, an intimate sidewalk espresso café, serves made-to-order sandwiches and salads, daily homemade soups, freshly baked pastries and desserts, and a variety of unique gourmet coffees and teas. Open Monday – Friday for breakfast and lunch.
